Easy, Easy, Yummy, Yummy Pasta

We all know the drill, 15 minutes tops to make a dinner you can feel good about serving. Here is my feel good pasta recipe. Not great. Good. It is not low in fat, but it is yummy, and easy, and my children gobble it up. It also makes a great lunch the next day packed in a thermos. My children call it  “mom’s famous cheesy pasta”. Enough said. Although you should know we use the term famous liberally around here – I have famous brownies, famous meatballs and spaghetti, famous pancakes. You see what I mean.

Easy, Peasy, Lemon Squeezy – the ingredients are:

1 lb of pasta – I like shells for this but you can use penne as well. I also try to sneak in whole wheat when I can – see example. I like De Cecco or I get Whole Foods 365 organic brand, whatever your favorite pasta brand is – insert here.

1/2 cup of butter

16 oz container of sour cream

1 cup of parmesan and or parmesan / romano – this recipe is an art, not a science. You can use grated cheese – I had a shredded Italian variety from a Whole Foods run and so used that in the example above. Think art.

Kosher salt to taste. That is it. So I cook the pasta, and while it is straining melt the butter, add the sour cream and parmesan. And then mix – voila – dinner and lunch. It is all about the efficiencies ladies.

I put some Bell and Evans chicken strips on the side with some carrots sticks and my kids are eating a decent, somewhat healthy dinner.

This will not win me the James Beard award, however, I can assure you, your kids will love this. And so will you.
