I just love the colors of Easter – all that pastel wonderfulness that mimics the gorgeousness sprouting outside for Spring.

    With family near and far, our Easter celebration changes location often. But what does remain the same, is Easter baskets, egg dying and hunting, delicious dinner and most important atttending church service.

    Our family (mom’s side) is Maltese so we get together Mid March or month prior to Easter and make a cookie each.These are a fierce size roughly ranging from 9-15 inches in length and about 8 inches acrossed and double layered with royal icing on top in various colors, and Christiian symbols, we have also made duck shapes and smaller ones for the under 5 crowd. They are called Figolas, the cookie itself is usually a sugar cookie and layered with an almond paste. My mom just informed me though that you can use any cookie dough to do it much to my hubby’s delight (he is a choclate chip nut).
